Extra virgin olive oil produced from the Picual and Arbequina varieties. To prevent oxidation, the olives are processed into oil within a few hours of harvesting. The juice is extracted from the olives by means of cold centrifuging. This is done mechanically and without the use of chemicals. The rains and winds of the Tramuntana mountains, combined with the sunny climate of the island of Mallorca, ensure the balance of the aroma and the intense flavour of this oil.
